Woodsman’s Rabbit

You’ll Need:

  • 2 Rabbits
  • 1 pound Bacon
  • 1 Onion, Diced
  • 3 Carrots, Thinly Sliced
  • 2 Stalks Celery, Diced
  • 2 Tomatoes, Diced
  • 1 Cup Mushrooms, sliced
  • 1/4 Cup Flour
  • 1 Cup Red Wine
  • 1 Cup Water
  • 1 tsp Minced Garlic
  • 1 tsp Favorite Seasoning

  1. Cook up all the Bacon. When crisp, place on paper towels to dry excess grease off then crumble.
  2. Brown all sides of Rabbits in leftover Bacon grease. Once browned, add to crock pot.
  3. Fry up the Garlic and Onions until golden brown then add to crock pot.
  4. Add some flour to the bacon skillet along with some Wine and scrap all bits off bottom. Add in Water, Tomato and Seasonings and bring to a boil. Add this all to the crockpot.
  5. Cook on High about 2 hours, add Mushrooms then continue to cook another 2 hours.
  6. The Rabbit should be falling off the bone when ready to serve.
  7. Sprinkle with Bacon and enjoy.
